Nice Parul. It says a lot in few words. With so much happening around the world it conveys a beautiful message, has left me into deep thought for sure.
Friends Do you believe in Santa? Well we do and believe he always comes to bless us all with a shower of happiness and goodness. The point is at times some one is Santa for us and at times we can be a Santa for others. Right!!!
So Friends Christmas is in the air 🙂 Its beautiful time of the year where we should let go off the past and step with positive spirits and happiness into the future. As Delhi is getting colder and colder we are getting lazier. Lol. But our sweet tooth in this beautiful weather pushed us into the kitchen to cook something awesome. As one of our uncles is in town from US and he is vegan we stuck to our vegan cake recipe to be enjoyed by all. We know Christmas calls for plum cakes with lot of richness but friends this one is light and nice. Equally good holding the goodness of walnuts this chocolate vegan cake is one of our specialties.
Friends as you all must be knowing Veganism is the practice of abstaining from the use of animal products. So our uncle is strictly vegan and loves happy cows, so this one is specially for him. But have to say without any milk or butter this turns out to be so nice and light. It is addictive and if you keep a plate along with some tea this winters it will be consumed by happy palates in no time. We assure that. So if you are planning to invite couple of people over bake two, else you will keep craving for more 😉
You all cant imagine our excitement when we perfect it each time and that too making it vegan so that each one our family members can enjoy it. Dont believe us? Bake it . You all can thank us later 😉 Here we go:
- Whisk flour, powdered sugar, cocoa, salt and baking soda in a bowl and keep aside.
- Put cold water,oil, white vinegar and vanilla essence in a big mixing bowl.
- Ad flour mix in 2-3 batches, folding gently with a wooden spoon each time. Do not over mix.
- Pour ¼ th cup soda water. Mix quickly and add walnuts.
- Immediately transfer batter into the prepared 6-7” round tin. Bake at 170 degrees for 40 minutes. Check with tooth pick.
