Happy Birthday Miss Foodies – Fantastic 4 – Mango Mousse

Hola!! We are going slow and steady on our blog these days as our bundle of joys keeping us really really busy 😉 But nevertheless guess what? It’s our 4th anniversary!! Wooohooo :). I still remember those initial days when we were posting our first blog and we had butterflies all over our stomach! How me and Parul waited for that one like for our blog! I had a sleepless night and Parul would be eating up my head as usual. Haha. Kidding!! But we were jumping the very next day when we saw likes increasing from 10 to 20 to 30 to 40 and so on! And we managed to get nearly 500 in our first year!! Kudos to us. Gosh I still get goosebumps remembering that. So for our Fantastic Fourth anniversary we have a very quick, simple and yummy recipe for all our followers.

It’s called the Mango Mousse. Its an eggless recipe and we have not even used gelatin for preparing it and yet it sets so perfectly as you can see!

Just a perfect treat for veggie lovers on hot day. I know the name mango in itself is so appetising in summers! This mango mousse is light creamy and heavenly with the gorgeous aroma and color of mango. #foodgasm# We have used grated chocolate as a topping but you can use dry fruits or any other innovative topping that you wish to put! And I can be so sure the you will try your hands on it even in this soaring heat. So let’s get going:)

Isn’t it the easiest recipe to satisfy your sweet tooth! It’s indeed on the top of our summer menu these days as it is the best thing to have for your perfect dinners. Serve in shot glasses and see your guests drooling over and enjoy the compliments.

Kit Kat Mousse Pie

6 months already!!! Woooohooo!! Our new member in the missfoodie family is growing up fast. Did I mention a new member, oh ya I forgot to introduce you all to our cutie patootie Nyra Batra. She is Parul’s daughter and maasi (that’s me) just admires her. So our today’s post is as yummylicious as our adorable little munchkin! Any guesses? It’s the Kit Kat Mousse Pie! Drooling over the name, you will surely fall in love with the recipe as well.

This one seems to be quite popular these days and it seemed like it was haunting us.Then what, we just had to try in our kitchen and thats what we did!!!! The result is right here with our little twist to make it easier for you all 🙂

This simple and a must try pie will make everybody go la la and you will surely feel on top of this world! It has a nice crunchy feel of the kit Kat chocolate filled with a gooey mouth melting texture of chocolate mousse. I know it sounds sensuous;). I am smitten by our cute little princess and this lip smacking pie:)

Vegan Banana Bread

Hello friends. Hope you all doing good.  In case you wondering this looks like the previous post, hold on as today its my besties birthday 🙂 So after me its her. Welcome to the 30’s club baby. Oh did I mention ….lol… As much as I love surprises I know you too my dear. And I am sure you would be least expecting this post going live. A fatso that I have become, difficult to manage work in kitchen. But those extra cravings made me do it ,I guess.

Friends what we have on the menu today is surely interesting, easy and tasty with simple ingredients readily available in your kitchen.  Its one of favourites. Being a bread lover , this recipe is surely for keeps . The two ingredients that majorly contribute to the texture are bananas and oil.

As we always believe in eating and baking healthy this ones made of whole wheat flour with barely any extra sugar. This will be best served for your tea time. Lets get going 🙂

INGREDIENTS

4 medium sized ripe or over ripe bananas.

1.5 cups whole wheat flour

1/2 cup vegetable oil

1/2 cup brown sugar or normal granulated sugar

1/2 tsp vanilla extract

1 tsp cinnamon powder

1/2 tsp nutmeg powder

1 n 1/2 tsp baking powder

1/2 tsp baking soda

METHOD

1)Preheat the oven to 180 degrees.

2)Grease a cake tin or rectangular cake pan with oil.

3)Take sliced banana and sugar in a mixing bowl.

4)Mash the banana well or puree them with help of a hand blender.

5)Now add oil, vanilla extract, cinnamon and nutmeg powder to the banana and mix well.

6)Sieve the flour with baking soda and powder in the bowl containing mashed bananas.

7)Fold the sieved flour really well.

8)Pour the bread mixture in the loaf pan.

9)Bake at 180 degrees for 30-40 minutes or till a tooth pick inserted in the bread comes out clean.

10)Once baked remove the bread from the pan.

11)Serve yummy banana bread warm.

Granola Bars

Hi friends. So here we are. Keeping bit busy with lot of things. But this one is specially for mi chica Parul. Happy happy Birthday sweetheart. Oh its 30th 🙂 Oh I mentioned,lol. Dear I cant write long senti messages , thats more of your department,thanks in advance for baring with me as the post goes live. But its almost 20 years we have known each other and its a journey to be cherished. Life ahead will also be beautiful and we will make it memorable together. And i am even more excited to welcome the little part of you. And as I have to keep you healthy I have got these super healthy Granola Bars on the menu.

These are easy quick crunchy and super healthy. They sound best for the festive season also coming our way. So lets get going:

GRANOLA BAR INGREDIENTS:

Dry ingredients: 2 1/2 cup regular oats

Quarter cup sweet flaked coconut

2 Tbsp brown sugar

Extras: Toasted almonds ,Toasted walnuts, Dried cherries ,Mini chocochips

Wet ingredients:

1/3 cup canola oil

1/3 cup honey

1 tsp vanilla extract

METHOD:

Preheat oven at 325 degrees. Prepare a 9X9″ square pan. Line it with parchment paper and grease it with butter. Set the pan aside. Take a bowl and mix the dry ingredients. Take a total of 1 cup of your choice of nuts/berries and mix in dry ingredients.Keep it aside. First put oil in a cup and put honey on top. It helps honey not to stick around the cup. Combine all ingredients together and put in a pan. Press it down into the pan and put it in the oven for 30 mins. Let it cool and take out from the tin and paper. Cut into bars and enjoy the healthy and crunchy bars.

Orange Marmalade Cake

Hi friends. Hope you all doing good. We are doing more than fine specially because of this post.
We always try sharing best of recipes and all . But before we share we get to eat them till last bite while working hard in our kitchen. Well that’s our fruit for hard work. But honestly there’s no doubt about how much we love eating but the happiness doubles after sharing it with you all. Cooking and baking both are all about experimenting and we oh so love it, specially when the end result is soooo yummy that it leaves you satiated. Also it is way above satisfaction when your loved ones are bowled over by your culinary creations 🙂
How many of you like marmalade. Well I am assuming most of us because Sakshi n I oh so love it. Be it in breakfast with bread or as kids like it topped on paranthas. Oh and we love it the most in our cake . Yessss marmalade cake. You heard us right. It always comes out clean and yummylicious.

Now isn’t that tempting. Trust us this ones one of the favourites amongst our family members. My sis in law who is so so adorable drools over this cake of mine ever since I baked it after wedding. Now isn’t that what you really want. People loving your culinary creations. The excitement doubles the amount of effort and the end result is right here. Let’s gets started:

NOTE – This goes great with almond flakes. You can add almonds as told in the procedure OR if you wish the almonds to show up on your cake put them after half time. Once you see the cake has risen to a good level open the oven and quickly spread the almonds over the cake. But make sure you do not take too long in the process.

This easy and delicious cake is always a hit. Away from usual chocolate, this is light fluffy n moist. Goes superb at you tea time invites or otherwise. Try it for sure because we bet you will love it .

Review: Delhi Club House

Hi friends. The winters finally seem to hit Delhi. Though yet not so strongly but we are happy to get some warm clothes out at last. Oh God ! This weather calls for some food. Our life revolves around just food food and food. What to do. We are born to eat and have to keep up to our name: Miss foodies 😉

So as we talked of the sangam courtyard which has come up again quiet well, we continue to do so today as well. We are actually enjoying visiting this side more as we believe somewhere it is still away from all the crowd. Its getting talked about but thankfully not getting as crowded for now and we wish it remains the same.

So we introduce you people to Delhi club House today. This one is yet again by none other than Marut Sikka. It is in the lime light for this very own reason. After success of his previous food magic places he seems to be playing quiet well yet again. Comfort food with dallops of nostalgia in an ambience inspired by look of grand old club with colonial roots is a complete win win. The good choice of music helps enhancing your experience.

What we had: The menu is limited but quiet interesting with some great food. As winters hitting, specially the chilly evenings made us order some hot tomato and red pepper soup. Its surely creamy but satiating and as the name suggests the pepper surely hits your throat. We loved it.

Then came the rawa cutlet (Madras club). The menu is actually interesting with the highlights of variations. These were warm and crunchy served with coconut and red chutney. The tinch of rye (indian spice) adds to the flavour.

Then came the yam galouti kebab. Simply rich and delicious melting in the mouth. Must order for a happy palate. Then we ordered the veg kakori (Mahomed bagh club) These mini ones with white sesame on the outside are soft inside.

For the mains we ordered Khorma biryani from Nizam club. It was as satiating as it looks. We relished it thoroughly. Along came the Amritsari kulcha, channa (Amritsar Club). This was divine too. Hot and spiced channas were too good to resist.

Do we recommend : yes absolutely. The place has great atmosphere with club classic food specially for a weekend dinner. The place is lively with great music. The prices are decent for the portions and satiating meals. If you dine in late you will surely enjoy moving yourself a bit with the music and lively ambience. The service may take little while but you can always enjoy chatting until then. The limited menu may make you think of visiting again but we feel theres still something about the place for we are surely visiting back soon.
